Deep as an oil-rig moon-pool


The nose evoked sea coal and chimney scrapings, Pontefract cakes, Eccles cakes, Demerara-sprinkled seaweed, beach bonfires and bothy drying rooms. The palate swirled with dark flavours – condensed smoke and treacle, toffee dipped in engine oil, pipe dottles, cigar ash and Spanish tapas (chilli garlic prawns, bacon-wrapped dates stuffed with almonds). The reduced nose – shoeshine on the Queen Mary, a flooded engine room and burning fish crates. The palate grew sweeter – over-done tablet, burnt fruitcake and roasted chestnuts; hickory smoked pretzels and menthol on the finish. After five years in ex-bourbon wood we transferred this into an ex-Islay oloroso hogshead.
