A warm welcome laced with the tingling dustiness of finely ground white pepper introduced us to the clean and calming sensation of standing on the seashore and taking in a deep breath. As the waves pulled pebbles up and down the beach, clouds of fine sea spray were released into the air. The mineralic and salty tang mixed with sweet smoke from burning applewood chips that were being used to smoke fresh fish seasoned with tarragon and lemon. Closer inspection revealed shellfish and pistachio nuts with light olive oil. The introduction of just a few drops of water sent the wood smoke into a decidedly more charred domain with sticky tar and salted liquorice. The finish was clean however, with a light floral note of fresh lavender.
