We kick things off with a more savoury dram in Cask No. 6.53 Fresh from the replicator that dotes on malty pastries with herb butter. This lively Speysider will wake up your palate and stir conversation as you settle in for the flight. Next, a richly endowed and complex pour from the Society’s first distillery. Cask No. 1.249 Whisky afternoon offers ample chocolate, spice and citrus to complement the oaky tones derived from a first-fill ex-bourbon barrel. We turn to a designer barrel with Cask No. 95.49 Curious and alluring and find loads of butterscotch, vanilla and caramel confections interwoven through charred oak and spices for a thought-provoking pour. Shaved, toasted and re-charred casks like this one typically create a world of flavours to coax out of the glass! Our final malt showcases the exotic side of Highland peat with coalescing aspects of grilled tropical fruits, rums, antiseptics and smoked fish. Cask No. 122.43 Conjuring up all sorts of images sent our Tasting Panel on a gustatory jet set spanning Japan, Spain, Mexico, and India! Suffice to say it’s a perfect way to conclude your whisky-loving flight!
