As winter continues to plow through February, I wanted to pick a collection of Hidden Gems that would bring some sunshine into your home.  The three casks that follow hail from Scotland and Canada, and are available right now for you to explore and expand your palate.

The 9-year-old Cask No. 48.153 Single minded feels like a stroll through the garden.  On the nose, the aromas offer a burst of freshly plucked mint, rosemary and thyme. Flavours of golden raisins nestle on the tongue, whilst hints of limes and Meyer lemons bring a zippy surprise. The confectionary flavours of lemon cakes and persimmons are balanced by linen and oak. This exciting profile is ideal for those wanting to explore our “spicy and dry” flavour profile.

If you need a break from the cold weather, here’s a hidden gem that captures sunshine in a glass. Aromas of lemonade, vanilla and coconut envelopes the nose of Cask No. 152.2 Cornucopia, transporting one to a tropical island, whilst on the palate burnt sugar laced with salt dances on the tongue. The convergence of vanillin found in oak and tropical fruit notes like mangoes and starfruit create the perfect marriage. This is truly fun delight for those who are drawn our “Spicy and Sweet” flavour profile.

Smoky scotches are often associated with the region of Islay, but 15-year-old Cask No. 66.239 Meet me at the game from the mainland of Scotland wields its own peated power. It spent 11 years in a bourbon hogshead, and one can detect that on the aroma and palate. The scent hits the nose with chimney smoke, milk bread and barley tea. Savoury flavours of roasted lamb covered in peppercorn spices deliver salivating sensations, whilst sooty vapours create a delectable and appetizing approach to this spirit. Essence of dill, shiso leaf, and pickled cucumber are also present here, which acts as an aperitif to open up the palate. Aside from it being aged in a bourbon cask, the influence of a 2nd-fill red wine barrique creates an enriching profile that accentuates dark chocolate, roasted coffee and tannins. This is an excellent whisky for members who love smoky whiskies.
