Tropical notes embraced mango, papaya and banana with cloudy lemonade and passion fruit in custard. Abundant coconut filtered into coffee beans and dark chocolate before cedar wood joined oak chips and quince marmalade. The palate was a big juicy affair with pineapple juice, oranges and Turkish delight. Darker flavours developed as figs, truffles and sultanas moved towards soft leather and oak. With water came a freshness that entwined peppermint and pencil shavings around cut grass, coconut and acacia wood. Baked banana now headed a charge through fudge, vanilla and pastry dough before we landed among mint chocolate, wood chips and strong black tea. This mash bill consisted of 80% corn, 8 % rye & 12% malted barley.
