About Saliferous Sauce: Explore this classic "oily & coastal" US-exclusive single cask from Campbeltown as sea spray, confectionary character and gingery spice combine for a warming and wonderful expression.
Tasting Panel Note: On the nose, salty sea breezes arrived carrying suggestions of old fishing gear, outboard motors, freshly caught crabs in plastic buckets and lemon on oysters. The palate majored on liquorice and ginger – liquorice allsorts and sherbet fountains, ginger snaps and chocolate gingers; plus balsamic, black pepper and ‘biting a beach hut door’. The reduced nose combined saltwater taffy, heather honey and balsamic on figs with crushed sea shells and dried seaweed. The palate had candied lemon slices and chocolate limes, rhubarb stewed in ginger wine, brined ham and moules marinière; before oak, clove and ginger root warmed the finish.
