We were greeted by a graceful nose of fruity top notes, including white grape juice, musk melon, lychee and muscat grapes. A trace of dry sherry was supported by honeysuckle, dried fruits (including orange) and honeycomb on a salted caramel base. The neat palate started sweetly with toffee apple, ripe cantaloupe and dried apricot then savoury and spicy notes took hold – tamarind, roasted acorn squash and old books – before wildflower honey appeared on the finish. Diluted aromas turn to fruit cake, marzipan, butterscotch, candied banana and fresh figs, then salted pecans, walnuts and more honeycomb. The palate with water boasts salt water taffy and butterscotch sweets, savoury pork tenderloin and cigar leaf midpalate and gingerbread kitchen spices on the finish. Beautifully complex! After eleven years in an ex-bourbon hogshead, we transferred this whisky into a 2nd fill Moscatel hogshead.
