Pleasing sweetness, playful heat

The nose started with fruit salad chews and trifle (especially the fruit and jelly) – then we got cigarette packets, ash, wood char and incense burning in a Greek Orthodox thurible. The neat palate packed some playful, spicy heat – ginger, wasabi and cough lozenges – all balanced by the pleasing sweetness of plum jam, marzipan and dark honey. The reduced nose became more perfumed – lavender, sandalwood, crystallised ginger and lemon; with meringue, golden syrup and banana split completing the mix. The reduced palate continued the duality of malty sweetness (Café Noir biscuits, brandy snaps) balancing a dry spicy finish of clove balls, humbugs and coffee grinds.
