The slightly wacky nose had waxy oiliness – flowers and hedgerows, putty, straw dipped in wax, stuffed Greek vine leaves, bee pollen and linseed oil. The palate tasted older than its years – dried mango and Meltis newberry (jellied) fruits, olive oil cake, pecan pie and yum-yums and a salt and pepper earthiness to finish. The reduced nose held fruit gums, rich sultana cake and orange and lemon Pana cotta, agave syrup, beeswax and honeycomb. The palate now started with fruit pastilles, peach, cherry and blackcurrant, shifted to marzipan and candied angelica and finished up with teasing cardamom, ginger, juniper and oak.
