About Step forward, inhabitant: June’s Bottle of the Month and Father’s Day US-exclusive is a smoky, dark and deeply rewarding dram from Islay conveying chocolate, vanilla, mint and an intricate peat reminiscent of exotic scents and spices. Tasting Panel Note: We snapped a piece of dark chocolate from within its golden foil prison, dropped it in caramel and stirred with wintergreen mint. This was deep, rich, sophisticated. The palate was all of the above, increasingly rich and viscose as treacle collided with coal dust on a wood-fired pizza base. Water pulled out the cask's previous inhabitant even more, with dried grape and golden syrup joining mince pies on the nose. The palate was now full of sandalwood and supremely sweet, woody and retaining that wintergreen from the start. A very clear salinity and a delectable dank note arrived right at the end. After nine years in an ex-bourbon hogshead, we transferred this to a first fill Spanish oak oloroso hogshead for the remainder of its maturation.
