Agave-induced invigoration

Northern Ireland

A light golden syrup note dusted with icing sugar and given an agave-induced invigoration by some unexpected notes of tequila blanco and cough mixtures. Touches of calpol, a little farminess, some dry earth, a coal scuttle, stables and baled hay. Lemon rind, tea tree oil, cinnamon bark and a few rings of BBQ pineapple. Water gives notes of mown grass, crushed leaves, chamomile, dandelions and parsley butter. The unreduced palate is spicy and prickly at first. A warm pink peppercorn crush with notes of rocket salad, truffle oil, herbs de provence and flat bread. Reduction reveals camphor, rapeseed oil, white stone fruits, lychee, tinned peaches in their syrup and a warm, quince paste spiciness.
