A wave of coconut washed over peaches, cherries and baked apples as a dusting of icing sugar settled on layers of marzipan and vanilla sponge cake. Fruit syrup sweetness laced the tongue along with sherry trifle and Mānuka honey before bitter orange and oak tannins joined the herbal influence of dry vermouth. The sweetness receded slightly with water to allow orange, lemon and lime to combine with pencil shavings and banana skin on a bed of crushed walnuts. Flavours had a grapefruit pith tingle that fused with wood tannins, juniper and dry herbs to suggest a fine gin martini with a dash of orange bitters.
