Strawberry summer flan

A soft sweet welcoming aroma greeted the Panel; almond croissants, all-butter shortbread, doughnut rings and strawberry summer flan. The taste neat had a gentle heat with subtle spiciness of scrumptious rich peach, cranberry and plum fruit chutney, whilst in the finish rich pears poached in honey and rose water. A little dilution added the fruity freshness of a summer fruit cordial mixing ginger ale, oranges and lemons with freshly crushed mint. On the palate now silky sweet like a strawberry-kiwi smoothie with a tiny pinch of cayenne pepper. After 17 years in an ex-bourbon hogshead, we transferred this whisky directly into a 2nd fill toasted oak hogshead for the remainder of its maturation.
