We all agreed to give this sample a little time to breathe in the glass to be then rewarded by a hearty Scotch broth with plenty of diced smoked bacon. The mouthfeel had a sweet, syrupy texture with raisins, caramel and maple syrup but, remaining in the background, was the meaty note of well-fried bacon on top of a pancake stack. With the addition of water, we found ourselves in a mountain bothy searing venison in a cast-iron pan. On the palate we enjoyed the venison steak with a blueberry sauce and a red wine jus. Following 11 years in an ex-bourbon hogshead, we transferred this whisky into a first fill American oak STR with new toasted heads barrique.
