About Toasted and roasted: This is Orkney at its best with ample amounts of ripe orchard fruit character to complement the classis heather-and-honey peat. A lovely maritime-inflected combination of smoked honey and singed herbs lifts baking spices savoury snacks on the finish.
Tasting Panel Note: The scent of heather honey on toast as well as a scoop of apple, smoked pear, walnut and honey ice cream made us all eager to try it. We found sweetness in abundance on the palate yet, at the same time, a surprising amount of smoke which made us think of cinnamon-toasted brioche with a dollop of honeyed ricotta and served with peat-smoked roasted plums. Water added whole grilled sardines smoked in rosemary and thyme while, to taste, a slice of stone-baked pizza with capers and olives. At seven years of age, we combined selected hogsheads from the same distillery into a variety of different casks to develop further. This is one of those casks.
