The panel found a complex entanglement of smoke and rummy goodness. Fruity green chilli peppers made themselves known, some incense smoke and a dram of rum thrown onto smouldering peat. It opened up with time and became sweeter and more enticing. In the taste, the damp peat smoke was prevalent, with salty maritime vibes and a spicy sweet finish like a smoky rum baba. Water brought the fruits out, with fermenting pineapple, rummy bananas and subtle cherry notes. We found the smoke and rum further mingling and harmonising. The finish had a curious savoury dry edge, like an ash rolled pigeon breast!
