About Meaty Mirepoix: Our Speyside US-exclusive cask embodies the richly endowed sherry cask-matured style that has become so popular among our members. Rich, meaty and magnificent, this PX cask came directly from a Solera system in Jerez, Spain (you don't see that every day!). The resultant whisky is one to behold!
Tasting Panel Note: “Rich and hearty”, “ploughing a field with horses” and “warming you on a freezing cold winter’s day” were just some of the comments nosing neat. On the palate we found great texture, warm and sweet with a hint of meat, like a warmed-up bowl of spaghetti bolognese the day after you cooked it. Be careful when you add water. The aroma was now very autumnal, transporting us to a truffle hunt, with mushroom foraging and picking blueberries. The taste took us back to the spaghetti bolognese, but now the hidden stars of the dish shone, as carrots, celery, onions and the perfect mix of spices and herbs came to the fore. Following 11 years in an ex-bourbon hogshead, we transferred this whisky into a first fill PX ex-bodega barrique.
Members Note: Overall a savory, chocolatey sherry that brings to mind a stroll in a forest after a meaty lunch. Cask influence is present but balanced and the palate is complex but approachable, with a great mouthfeel.
