Tasting Panel Note: An inspired mixologist poured a glass of cherry cola, stirring in some chocolate chips with a cedar stick and served this concoction with a slice of Christmas cake. Our palates were glazed with apple sauce, battenburg cake milkshake and cinnamon syrup. With water, the nose was a new leather wallet showered with mulled wine, rosemary, honey and chocolate sauce. Darker fruit then emerged on the palate, with plum, fig and strawberries soaked in cherry syrup. Diluted, the expression makes a stark 180-degree turn from rich and viscous to lighter and rather easy going…. choose your own adventure! After 13 years in an ex-bourbon hogshead, we transferred this to a first fill Spanish oak oloroso hogshead for the remainder of its maturation.
