The nose starts fresh, fruity and bright (wine gums, peach melba) but deepens with time to tawny port, barrel staves and dunnage. The big, intense palate combines red apple skins, pomegranate, cherry stones and kirsch with salted liquorice, wood char, citrus peel and ginger wine; the finish dry. The reduced nose has blossom honey, flapjack and vanilla slice sweetness, behind which lurks shaved oak, menthol cigarettes and leather. The palate now mingles cherry jam, marzipan, sweet black tea and molasses with winey notes of grappa and Campari – the finish has wood and gentle spice (cinnamon buns, mild chilli and liquorice-flavoured lozenges).
