We were transported to a stately home in the Caribbean, to a room full of 19th-century mahogany and cedrela wood furniture. The taste was out of this world: words could not do it justice, but we tried. Fine tannins, ground ginger, smoked marmalade, freshly ground coffee beans and caramelised French toast. A drop of water and, as we burned driftwood on a Caribbean beach, we felt it was the perfect time to recite the poem Love After Love by Derek Walcott which ends with the line "Sit. Feast on your life." Following 21 years in an ex-bourbon hogshead, we transferred this whisky into a first fill Spanish oak oloroso hogshead.
