The nose had Hubba Bubba and Dentyne early on, followed by fruit slice, muscovado and molasses sweetness; finally, Jezebel cigarettes and covered wagons rolling over prairie grass. The neat palate had breath-taking chilli heat, a good whack of wood - and the sweet sunshine glow of spun sugar, yum-yums, vanilla and toffee apple sticks. The reduced nose had caramel, golden meringues, golden syrup and Eat Me dates – served on an upturned tea chest – also hints of patchouli incense. Much less heat on the reduced palate – we got candy floss, candy corns and brown sugar, cough candy and a finish of burnt twigs. In the Texan heat this whisky had reached a whopping 71.2% ABV during maturation. We brought it down to 62% for greater balance, while ensuring that we retained the wonderul high impact flavours.
