Have you ever slept in a four-poster bed then woken sun kissed as the curtains were carefully drawn making you feel warm and comfortable? We then enjoyed a mixture of velvety rich dark chocolate covering a smooth sweet creamy passion fruit fondant centre and to spice it up a little a few pink peppercorns thrown in. A tiny drop of water and miraculously a chocolate fountain, walnut whip and treacle sponge cake appeared while on the palate beautifully sweet and nutty with candied ginger and orange peel. After thirteen years in an ex-bourbon barrel, we transferred this whisky into a 1st fill barrique from a privately owned small bodegas, now in its 9th generation, that focuses exclusively on the Pedro Ximenez grape.
