Smoked Ginger Pear Bellini
Islay
A very clean nose right from the start with aromas of white rye and whole wheat sourdough bread slightly toasted with salted butter, and porridge with slightly smoky chestnut honey. On the palate there was plenty of sweet smoke and ash, balanced by the lingering spiciness of caraway seeds and ginger. Adding water, spiced vanilla cookies and fruity/yeasty aromatic notes of a Ginger Pear Bellini traditionally prepared with Champagne and pureed peaches. Less ashy with more sweet flavours appearing, a sweet and spicy dessert with strawberries and peaches marinated in balsamic vinegar marinade and grilled in foil served over Greek yoghurt.
