Let’s jump into it with a classic palate invigorator with Cask 12.45 Leafy, lemony and lovely – vibrant citrus and savoury herbs provide a delightful opening salvo for your first 2021 tasting. Cask 82.25 Svelte and shapely follows with luscious tropical and orchard fruits in a complex and youthful display. Continue on the tropical path with aromas of quince and pear in Cask 73.118 Perfect pearings. An explosion of custard, mint and chocolate on the palate lead to chamomile tea with honey on a beautifully framed finish. Cask 89.13 Freshly-baked multiverse piles on the vanilla icing-topped confections of cinnamon buns and gingerbread with creme anglaise, butterscotch and Belgian waffles for good measure. Now, we turn to a Speyside sipper with coastal qualities in Cask 46.103 Mutiny on the Bounty. Whiffs of smoke lend complexity to elderflowers and sea salt caramels in this distinct malt. The big finale of our flight comes in the form of big peat from the Highlands – Cask 16.50 Tar in the night offers up creamy texture in a profoundly smoky package.
