Notes
We imagined walking into an antique shop and opening an old sea chest which probably sat in the far corner for many years with nobody paying it any attention. We lifted the lid and found gold coins, pewter drinking vessels, a silver sextant, old maps and leather-bound books. On the palate, we found a spicy dulce de leche with a dredge of cayenne pepper. After dilution, we grilled panettone with vanilla ice cream, peaches and flamed orange peel. To taste, we supped a sweet Norwegian soup called sot suppe consisting of dried fruits, spices and tapioca. Following 12 years in an ex-bourbon barrel, we transferred this rum into a second fill toasted French oak barrique.
