The nose detects marzipan and donuts, green apple and mango, with the cask supplying charred oak, coconut shavings, coriander and nutmeg. The palate gets a sweet flood of caramel, treacle, chocolate and dried banana chips; the spice is now gingerbread, chilli and wasabi saison beer – oak and ash appear in the finish. The reduced nose becomes sweeter and more perfumed – candied pistachios, muscatel, pear, plum and cherry, rose petals and perfumed tobacco. The palate turns to fresh figs, bramble jam, ripe mango and plums flambéed in cognac, then cinnamon buns with dark chocolate and orange zest bitterness in the aftertaste.
