Notes

The neat nose suggested cherry distillate, then lanolin, salted milk chocolate, dry-roasted peanuts and hessian. Beyond that we also found some wonderfully damp earthy tones, raisins and hints of walnut and rosewater. Reduction brought camphor, pure salty old bodega funk, dried sage, mint tea and dark fruits stewed in armagnac. When neat, the palate was a tad woody up front, giving way to cinnamon sugar, pomegranate and date molasses, and rosehip tea, before mint julep and ginger cordial. Water brought more aged armagnac vibes, sultanas, prunes and cherry bakewell, plus Serrano ham, soft wood spices and cloves. This was matured for 11 years in a bourbon hogshead before being transferred to a first fill American oak PX sherry hogshead.
