A gradual crescendo of sweet aromas; jammy dodgers, custard creams and chocolate Swiss roll found a grand finale in the tantalizing scent of warm apple cinnamon cakes with plenty of Calvadoscaramel sauce. The taste initially ginger spice was soon followed by bittersweet chocolate tart with salted caramelised pistachios. Diluted, pineapple Tart Tatin and apricot custard Danish pastries and the taste started with sweet juicy citric flavours and ended with a dry herbal flavour like hopped grapefruit bitters – ‘very sophisticated indeed’. After 14 years in an ex-bourbon refill hogshead, we transferred this whisky directly into a Sauternes cask for the remainder of its maturation.
