The nose is a walk in the hills – freshly Dubbin-waxed boots, grassy notes and wildflowers, with suggestions of gardenia, pineapple and tobacco leaf. The palate introduces a tropical heatwave; it’s as sharp as a pirate’s cutlass; beef jerky, chilli flakes, humbugs, vanilla and Oddfellows sweets. The reduced nose offers sunshine on flower meadows, polished wood, a box of Sun-Maid raisins and ice cream with banana fritters and caramel sauce. The palate now becomes lip-smacking and juicy – bananas flambéed in rum, dates and café latte, while the finish finds aniseed balls and clove rock. After four years in ex-bourbon wood we introduced this to a Panamanian rum barrel.
