First we noticed the wonderful deep reddish-brown colour soon followed by aromas of polished mahogany, stewed apples with cinnamon and raisins, Demerara sugar and a Rusty Nail cocktail. The taste neat was full bodied with a chewy texture like roast beef with Yorkshire pudding and caramelised shallots. A drop of water and the delicious scent of beef stew in red wine sauce filled the room and to taste now the creaminess of a mushroom and truffle oil risotto. After 24 years in an ex-bourbon refill hogshead, we transferred this whisky directly into a Sauternes cask for the remainder of its maturation.
