The impression of a fresh, fluffy fruit Pavlova with light swirls of vanilla cream mixed in with pirouettes of menthol tobacco, damson jelly and figs rolls. The taste neat is like a grand jeté (full leg splits in mid-air) between sweet fatty flavours of coconut whipped cream on a ripe mango salad and a Thai ginger chicken stir fry. With water we were sitting comfortably in wooden patio deck chairs, a nutmeg spiced fruit punch in one hand and a bag of monkey nuts (in shell peanuts) infused with Tabasco seasoning in the other. After twenty-three years in an ex-bourbon hogshead, we transferred this whisky directly into a new oak hogshead for the remainder of its maturation.
