The best Sunday roast


A dram to get the juices flowing with honey roast parsnips, charred pork belly and sage sausages with stuffing made from rosemary and sweet chestnuts. A distinctly aniseed note came through like liquorice sweets and fennel seeds coated in sugar that gave a deliciously sweet balance to the savoury overtones. The palate continued along a sweet path as muscovado sugar combined with treacle tart but with a burnt suggestion of chimney soot mixed with Cajun spices. Roast beef followed with a sticky balsamic glaze and horseradish sauce that prevailed onto the finish to be fused with cumin and gentle wood smoke.
