Notes
As we dive into August, I’m excited to highlight three exceptional whiskies that are currently hidden gems on our website. These bottles have flown under the radar but are truly remarkable and worthy of your attention.
A younger expression than most of our Distillery 5’s, Cask No. 5.137 Fresh, floral and beautifully balanced is more full bodied and a slight departure from the light Lowland style we’ve come to expect. An 11-year-old single cask from our Festival bottlings, this has 'Juicy, Oak and Vanilla' on the nose, along with plenty of floral notes. As you sip neat, the palate smiles broadly at you, exploding with creamy vanilla, rose pedals, lemon tart, tropical fruits and white chocolate. Add a round of water to reveal fresh baked croissants with super fruit jam and a side of fruit cocktail.
Remember the old commercial: “You got chocolate in my peanut butter! … You got peanut butter in my chocolate!” Only now it’s: “You got sherry in my peat! … You got peat in my sherry!” and it’s delicious! 13-year-old heavily oloroso sherried and peated Cask No. 53.468 Step forward, inhabitant falls into our 'Deep Rich and Dried Fruits' flavour profile for good reason. The nose explodes with an earthy, rich, sweetness that starts the taste buds salivating. Take a sip neat and feel the maritime peaty goodness wrapped in a dark fruit sweetness dancing across your taste buds. Dark chocolate, toffee, and toasted oak are also present. Adding water brings more of the oloroso to the front along with sandalwood. You’ll feel like you’re sitting on a cool beach in the dark with a fire burning while you’re drinking this one!
Last but certainly not least, we have a hidden gem in our 'Spicy and Dry' flavour profile from the Highlands. Cask No. 55.87 The stage is set spent 13 years in two ex-bourbon hogsheads and three years in a first fill ex-bodega oloroso butt. The nose offers aromas of dank earth, dark sweets and fresh ground black pepper. Sipping this neat emits flavours of dark chocolate, grilled veggie kabobs, chili oil spicy, and a board of charcuterie meats. Water brings out more of the sweets, fig jam, and salted Italian meats. Sixteen years of age shows on the palate with a lingering finish for days.
