Distillery Dive #5: With Love from the Lowlands
We’re getting some single cask love from the Lowlands with today’s Distillery Dive! Distillery Dive #5: With Love from the Lowlands represents the essence of the Society experience – showcasing how the same make distilled in the same spirit run on the same day can express itself in totally unique ways over time! Our comparative cask series continues as we explore the wide and wonderful ocean of flavours Society whisky offers!
Follow the River Clyde just thirty minutes from the Society’s Bath Street member venue and you’ll arrive at the doorstep of today’s featured distillery. Certainly, the most fascinating aspect of Distillery #5 lies in their decision to triple distill all their single malts. This third distillation creates a pure and delicate newmake with sweet citrus and malt notes. This delicacy demands excellent cask management, and just about all of this whisky is aged in first-fill ex-bourbon barrels. The bourbon barrel provides structure, sweetness and spice without overpowering the nuances of the make. Let’s discover just what nuances await as we examine two casks distilled on the same day and both aged 18 years in first-fill ex-bourbon barrels. Cask No. 5.89 Shaken not stirred presents rich fruits, vanilla and honey on the nose and palate whilst citrus and oak tannin provide the verve and intensity we seek in a dram. Cask No. 5.90 Luscious greenery starts with a similar aromatic delivery of sweets, but more chocolate than vanilla. The palate neat (and reduced) then shifts gears to an herbal expression sporting fresh grass, underripe banana and fresh herbs. Ripe tropical notes and accents of citrus and honey balance out the palate in a delightfully playful and complex malt.
