American whiskey is back, and we are very excited to announce our first release in months! Our American single malt comes to us from Brooklyn, New York. Across the East River from Manhattan lies the borough that hosts some of the state’s most exciting distilleries, and Cask No. 142.3 Themes of America is no exception! The single malt crafted here follows a unique protocol that yields equally singular casks. This includes three fermentation characteristics not found in Scotland. First, the use of sour mash where liquid from the previous batch begins the fermentation for the next batch (like sourdough starter). This lends consistency from batch to batch and is a practice not seen in scotch malt whisky production. Second, fermentation is done on the grains, whereas Scotch distilleries lauter off the grain before fermentation, imparting a robust flavour on the resultant whiskey. Finally, fermentation times are extended to two weeks when a typical “long ferment” in Scotland is about five days. These steps amplify the texture and flavour of the whiskey further, culminating in a well-endowed dram to savour. Much like a dozen or so distilleries in Scotland, the distillation process employs a worm tub condenser that limits the “copper conversation” to produce a bolder spirit with richness and weight. Seven years spent in a new American oak barrel at #1 char ensures the make and barrel will offer a harmonious and complex taste experience!
Our Bourbon and Rye single casks come to us from the newest member of our Society family. Located in Lawrenceburg, Indiana, distillery B7/RW5 has been custom distilling for brands that many American whiskey drinkers know and love. Varied mash bills are distilled so we were happy to taste samples from across their range of recipes and curate casks of distinction for our thirsty members! Today, a couple of inaugural casks are presented for your collection! Cask No. B7.1 Afternoon treats offers a decadent dram to slowly savour. It is considered a high-rye bourbon, since 21% of the recipe is rye grain with a base of 75% corn and just a hint of malted barley for structure (4%). After six years in a new American oak #4 charred barrel with #2 charred heads, waves of caramel, butterscotch and spiced fruits and vanilla will have you coming back for more! Cask No. RW5.1 The spice of life enjoyed the same barrel protocol of our bourbon, but the recipes couldn’t be more different. 95% rye and 5% barley yield a wildly spicy ride for rye purists, with copious amounts of cabinet, pepper and barrel spices accented by fruity notes and fresh mint on the mouth-coating finish.
The three casks offered today couldn’t be more different, thus providing a 360-degree view of American whiskey. They will make for an exhilarating tasting among friends who appreciate truly unique spirits!
